Learn hands-on, the art of pig butchery, taught by three-time hall of fame butcher Wurstmeister Mike Sloan. It is both informative and entertaining.
Students will be involved in breaking down five sides of pork (approximately 600 lbs. dressed out) into chops, steaks, roasts, ribs, bacon, ham, jowl, lard, and sausage. Students will be able to identify the primal cuts, retail cuts, where they come from on the carcass, how to prepare them, shelf life, and some preservation and packaging methods. You will also learn the art of knife sharpening and cutting.

Class will begin at 5 pm and last approximately 2-3 hours. Class will be a limited number of people on a first come, first served basis. This event is by reservation only. Tickets are $175 and include: a wurst meal with one free drink, a class personalized Hermann Wurst Haus washable apron, a Wurst Haus goody-bag, 10% off in-store purchases made that day (excludes liquor and any in-store specials), and roughly 20 pounds of retail pork cuts that you helped make.
